Ma recette est bien gardée et se transmet de génération en génération. Mais sachez tout de même que je suis un subtil mélange de mout de raisin et d’alcool. L’alcool va empêcher le mout de raisin de fermenter. C’est ce qu’on appelle le mutage. Ma fabrication est artisanale et ma teneur en alcool ne dépassera jamais 18°, c’est promis ! Durant cette étape, aucun agent stabilisateur n’est ajouté, afin de garantir ma liberté d’expression. Si un léger trouble ou dépôt apparaît, c’est normal, je suis un Ratafia au naturel !

Comme j’aime bien me déguiser, vous pourrez me trouver soit en Rubis soit en Ambré. La différence vient des cépages utilisés et des alcools associés.

My recipe is a well-kept secret and is handed down from generation to generation. I could however tell you that it’s a subtle mixture of grape must and alcohol; the alcohol preventing the grape must o ferment. That’s what we call the mutage. My production is traditional and my alcohol content will never exceed 18, it’s a promise! During this stage, no stabilizing agent is added, to guarantee my freedom of expression.
